(Adapted from a recipe I got on Simply Recipes)
3 or 4 ripe bananas (the riper, the better!)
5 Tbsp butter, melted
2/3 cup sugar
1 tsp vanilla
1 tsp baking soda
pinch of salt
1.5 cups all-purpose flour
Preheat oven to 350 F. Using a fork, mash bananas in bowl. Add melted butter and sugar. Stir in egg and vanilla. Sprinkle salt and baking soda over mixture. Add the flour last and mix thoroughly. Pour batter into greased 4×8 inch loaf pan. Bake for 1 hour. Cool completely. Slice to serve and enjoy!
Optional: Sprinkle batter with chopped nuts or brown sugar before baking.
